quick asian style peanut noodles

I posted this on my Instagram stories and a friend asked me to upload the recipe.

ADVANCED WARNING - it took 5 minutes, it practically threw itself together with little thought - but it works well and I'm happy to share, for my friend's sake if no one else's.

This is a typical night for me, I buy a load of food, mainly consisting of veg and a few bits (carbs!) to go with them to make them more substantial, mostly for my husband, who by the way has the appetite of a super human!

I'd just had my shopping delivered and I'd been working all day and couldn't really be that bothered to create a meal that took much thought or planning.

I'd bought fresh rice noodles and I had some frozen veg that needed to be used in order for the other bags of frozen veg to be accommodated. So I decided to use red onion, peppers and fresh mushrooms. Nice enough but if you're anything like me, that sounded dry as hell and thought I'd make a sauce to go with it.

This is another classic case of looking in my cupboard and wondering what will go well together. Peanut butter, in my book goes well with just about everything so I used that along with a light soy sauce. I love satay sauce so I tried to replicate that with onion and garlic granules adding some extra sweetness with maple syrup. I added a squeeze of lemon at the end just to bring it all together.

For the stir fry I used:
half a red onion
chopped mixed peppers
7 large chopped button mushrooms
garlic paste

Asian style rice noodles

For the sauce:
3 table spoons of smooth peanut better
2 table spoons of light soy sauce
1 teaspoon onion granules
1 teaspoon garlic granules
1 teaspoon maple syrup
1/2 cup hot water
half a lemon (juice)


In a large frying pan or wok heat some oil and add the onions, peppers and mushrooms. Allow to cook for 1 minute.
Add in 1 tablespoon of garlic paste and cook for 5 minutes, stirring occasionally.

In a large sauce pan add the soy sauce, onion and garlic granules and the peanut butter.
Cook for 30 seconds on a low to medium heat.
Add in hot water slowly, stirring as you go. Add all the water in as the sauce will thicken.
Let cook on a medium heat (do not allow mixture to boil) for 3 minutes, stirring as you go.
Add the maple syrup and stir - add more water if the mixture is too thick.
Squeeze the lemon juice in to the sauce and stir once more

Add the fresh rice noodles to the sauce and stir through, allowing the noodles to be completely coated.

Then add the noodles to the large frying pan of your veg and stir.

Serve and enjoy.
